Continue what you are doing, finish, and then acknowledge the guest

Ignore them, and let someone else serve them

Stop what you are doing, and immediately acknodlget the guest- even if you can't serve them- at least say 'hi' or 'i won't be a minute'

Wait for them to order without acknoledging them and then get their order without a smile

When its quiet at the bar, what do you do?

Make sure all the tables are clear, the area is tidy, nothing needs to be done and the guests are all served and then sit down
